- 3 lbs top sirloin beef
- 1 onion
- 1 lb mushrooms
- 2 tbsp oil
- 1 tbsp salt
- 1/4 tsp black pepper
- 2 tbsp butter
- 1 tsp mustard
- 1/4 cup wine
- 3 cloves garlic
- 2 cups beef broth
- 1 red chili pepper
- 4 tbsp cornstarch
- 4 tbsp water
- 1 cup cream cheese
- 1 cup sour cream

- Slice the onion and the mushrooms.
- Cut the beef into thin stripes.
- Add salt, black pepper and stir well.
- Select (Sauté) program to pre-heat the Instant Pot and then adjust the + or – buttons to set 30 minutes of cooking time.
- Pour cooking oil into the inner pot.
- Add butter and beef, stir well. Sauté for 5 minutes. Don’t overcook it, just brown the meat a little bit.
- Remove the beef from the inner pot, add onion and Sauté for 2 minutes.
- Add mushrooms, minced garlic, mustard and Sauté for 3 more minutes.
- Bring back the beef, pour wine, beef broth and stir well. Deglaze (scrape) the bottom of the pot so nothing’s stuck to it.
- Lastly, add chili pepper.
- Cancel (Sauté) program. Close the lid. Turn the steam release handle on the lid to “Sealing” position. Select (Pressure cook) program and set time to 15 minutes.
- When time is up, open the pressure cooker using Quick Release (let the steam escape instantly from the inner pot, turn the steam release handle on the lid to “Venting” position.
- Open the lid, select (Sauté) program and set time to 5 minutes.
- Add in the cornstarch dissolved in water, add cheese cream and sour cream. Stir immediately and thoroughly.
